We will start our tour by learning about the production of 100% organic arabica coffee. We will then delve into the environmental issues that pose a threat to Lake Atitlán and its inhabitants that live on its shores. Our first day will come to a close by talking with various cooperative members to discuss the importance of organic practices and their views on current environmental issues that the many lake towns are facing.
We will spend our second day focusing on the relationship between coffee and the environment and participate in a service project with an environmental focus.
To make tangible some of the topics discussed during the first two days and truly experience the biodiversity of the Atitlán, we will embark on a birding excursion that will take us trekking through the mountains, ending at a local project preserving natural springs in the mountains surrounding San Juan la Laguna. We will then visit a local organic bee and honey cooperative to see how they produce their products before our closing activity.
